Discover an authentic taste of Spain with Gachas Manchegas, a traditional dish from Castilla-La Mancha.
Made with chorizo, panceta, garlic, sweet paprika and almorta flour, this rustic Spanish speciality is rich, comforting and full of flavour.
Prepared outdoors on your HOT WOK, it combines high heat for frying the meat with gentle, controlled heat for slowly cooking the gachas until they reach a smooth, creamy consistency.
Serve hot with crispy chorizo, panceta and plenty of bread – preferably shared with good company.
Ingredients
-
Chorizo
-
Panceta (Spanish pork belly)
-
3–4 garlic cloves (or a whole head of garlic, if preferred)
-
Extra virgin olive oil
-
1 tbsp sweet Spanish paprika (pimentón dulce)
-
Almorta flour (grass pea flour) – 2 tbsp per person, or 3 tbsp for a thicker consistency
-
Water, as needed
-
Salt, to taste
Preparation
1. Fry the chorizo and panceta
Heat some extra virgin olive oil in a pan on your HOT WOK.
Fry the chorizo and panceta until nicely browned and cooked through. You can fry them together or separately.
Add the garlic cloves and continue cooking until everything is ready.
Remove the meat from the pan and set aside, leaving the flavourful oil behind.
2. Add the sweet paprika
Reduce the heat and add 1 tablespoon of sweet Spanish paprika to the warm oil.
Stir quickly to combine.
Be careful not to burn the paprika, as it will develop a bitter flavour.
3. Cook the almorta flour
Add the almorta flour to the oil and paprika mixture.
Stir thoroughly and allow the flour to cook, removing its raw flavour.
4. Gradually add water
Slowly add water while stirring continuously, similar to preparing a béchamel sauce.
Continue adding water until you achieve your preferred consistency.
Season with salt and adjust to taste.
5. Simmer gently
Reduce the heat on your HOT WOK and cook for approximately 15–20 minutes.
Stir continuously to prevent sticking and add a little more water if the mixture becomes too thick.
The gachas should develop a smooth, creamy consistency.
6. Let the gachas rest
Turn off the heat and allow the gachas to rest for 3–5 minutes.
As they settle, you will notice some of the oil rising to the surface – a characteristic of traditional Gachas Manchegas.
7. Serve and enjoy
Serve the gachas piping hot with the fried chorizo, panceta and plenty of fresh bread.
